Gluten-Free Cacao Bliss Superfood Muffins

I love Cacao!

It contains a great source of magnesium and antioxidants. It’s also excellent when you can eat this Cacao Bliss superfood-packed muffin as a breakfast or snack bonus cause it tastes like dessert! It’s moist and makes the perfect grab-and-go breakfast or works well as a snack to fuel you any time of day.  

This recipe is super easy to make with guilt-free yum! The star of this muffin is the superfood Cacao Bliss blend. I started using it a year ago and love the flavor profile. Cacao Bliss is a combo of decadent, raw Cacao paired with other raw good for you and health-boosting superfoods that have been a part of my daily lifestyle. I have tried using it in smoothies, hot drinks, baking, and desserts! My favorite is drinking it hot (:

Raw Cacao – Cacao is known to promote healthier-looking skin, is a powerful antioxidant, and may increase energy levels

Turmeric may help support our joint health, boost our immunity, and more!

MCT Oil – supports brain health and aids with mental and physical clarity.

Lucuma – the nutrients work as antioxidants to protect our cells against free radicals and are also known to help support balancing healthy blood sugar levels

Superfood Cacao Muffins

¼ cup cacao bliss super powder 

¼ cup unsweetened cocoa powder

2 1/2 cups of old-fashioned gluten-free oats blended into flour in high-speed blender or food processor on low speed until finely ground 

1 teaspoon baking soda

2 teaspoon baking powder

¼ teaspoon salt

2 flax eggs

3 tablespoons melted coconut oil

⅔ cup coconut cream

1 cup of ripe pear – about two medium pears. You can also use 1 cup of applesauce or two ripe bananas

½ cup pure maple syrup

2 teaspoon pure vanilla extract

½ cup sugar-free dark chocolate chips

Bake at 350 F for 22 mins, yield 12 muffins. 

These usually do not last more than a few days in my house. I like to store them in an airtight glass container in the fridge, and they taste great topped with nut butter! Enjoy!
